Bryn was lucky enough to work for Chef Michel at the two Michelin-starred London restaurant between 1999 and 2003. Starting out as a demi chef and leaving as a sous chef, Bryn learned his craft in Chef Michel’s iconic kitchen before moving on and becoming Chef Patron of his own very first restaurant, Odette’s in 2008. Twenty years on, this collaboration will be the first time that the duo will be teaming up in a kitchen on Welsh soil.
Expect exquisite dishes and a showcase of the very best of French and Welsh ingredients combined, as we welcome Chef Michel’s acclaimed Le Gavroche to Porth Eirias.

The outdoor terrace is open daily on a non bookable basis, dogs are welcome on the terrace and entry is via the Bistro entrance only.

We are very lucky that the Bistro benefits from an amazing sea view throughout. Tables directly by the window are allocated on first come first serve basis and seat a maximum of 4 guests. They are never guaranteed, please book early!
